Apple and berry crumble

After a day of hard graft at the allotment garden, this is the perfect way to recharge! Packed full of natural energy and goodness, this super healthy and incredibly yummy crumble has no added refined sugar, is gluten-free and dairy free to-boot. Woohoo!

I’ve used apples in this recipe because they’re currently in delicious abundance at out local organic farm shop, but you can change the recipe to suit your taste or use up whatever ingredients you have in the house. Equally yummy with pears or freshly picked blackberries!

Apple and berry crumble

  • Servings: Serves 6 (or 4 with leftovers for tomorrow, 2 with leftovers for the next few days or 1 extraordinarily hungry person!!)

Ingredients:

  • 200g oats
  • 50g pumpkin seeds
  • 50g sunflower seeds
  • 50g chia seeds
  • 50g walnuts
  • 50g ground almonds (or dried nut milk pulp)
  • 100g flaked almonds
  • 1 tbsp cinnamon
  • 100g coconut oil
  • 150g maple syrup
  • 3 large apples, unpeeled, cored and thinly sliced
  • 400g berries, fresh or frozen

Method:

  1. Preheat the oven to 170C (150C fan).
  2. Combine the oats, seeds, nuts and cinnamon in a large mixing bowl and set aside.
  3. Place the coconut oil and maple syrup in a small pan and melt over a medium heat on the hob, stirring until combined.
  4. Pour the syrup mixture into the oats, mix really well and set aside for 10 minutes to soak up all the yumminess.
  5. Place the sliced apples and berries in a large baking dish and cover with the crumble topping.
  6. Bake in the oven for 30-45 minutes until golden brown.

Notes:

  • Delicious on its own or served with homemade ice-cream, berry sorbet or natural yoghurt.
  • Any leftover crumble mixture will freeze brilliantly. Simply bag it up before baking.

Last year we planted a mini orchard at the allotment, so fingers crossed I’ll be making apple crumble with homegrown fruit very soon!
