If you feel the need for a bit of extra ‘zing’ in your life, then this super tasty, raw and healthy treat will really hit the spot! It has that slightly naughty, decadent taste of fudge and a definite fudgy texture, but none of the unhealthy ingredients. No refined sugar, no dairy and absolutely deeeelicious. How perfect is that!
Right now, springtime gardening is fabulously full-on, home-schooling is wonderfully all-consuming and keeping the family happy and healthy is a joyful juggling act. Life is crazily busy, but great!
Bring on the healthy fudge…
Raw Chocolate Fudge

Ingredients:
- 240g dark tahini
- 100g cacao
- 230g rice syrup
- 50g coconut oil
- 2 tbsp sesame seeds
Method:
- Add all the ingredients, except the sesame seeds, to a food processor and whizz until it forms a fudgy-looking paste. Now add the sesame seeds and whizz for a few seconds – you want them mixed through, but not crushed.
- If you don’t have a food processor, you can make the fudge very easily by hand. Combine the tahini, cacao and rice syrup in a big bowl. Melt the coconut oil on a very low heat on the hob before adding it to the mixture. Now stir through the sesame seeds.
- Line a suitable tray and press the mixture firmly into it. Place in the fridge for 1-2 hours or in the freezer for 30 minutes. You want it to be firm, but not frozen! When it’s ready, cut into small fudgy chunks and store in the fridge.
