Ingredients:

  • 240g dark tahini
  • 100g cacao
  • 230g rice syrup
  • 50g coconut oil
  • 2 tbsp sesame seeds

Method:

  1. Add all the ingredients, except the sesame seeds, to a food processor and whizz until it forms a fudgy-looking paste. Now add the sesame seeds and whizz for a few seconds – you want them mixed through, but not crushed.
  2. If you don’t have a food processor, you can make the fudge very easily by hand. Combine the tahini, cacao and rice syrup in a big bowl. Melt the coconut oil on a very low heat on the hob before adding it to the mixture. Now stir through the sesame seeds.
  3. Line a suitable tray and press the mixture firmly into it. Place in the fridge for 1-2 hours or in the freezer for 30 minutes. You want it to be firm, but not frozen! When it’s ready, cut into small fudgy chunks and store in the fridge.
