Amaranth & Blueberry Bars

This is a very tasty recipe from another of our cookbooks, Superfood Breakfasts. It’s a little book that packs a big punch of healthy breakfast inspiration, so ditch the coco-pops and try an on-the-go Amaranth Breakfast Bar instead!

Amaranth is a really cool grain that’s just as high in protein as quinoa and adds a little extra crunch to these muesli-esque bars. A brilliant portable breakfast when you’re late for the bus, an energy-boosting afternoon snack to fuel some digging on the allotment and delicious with a dollop of yoghurt for pudding.

Quinoa Superseed Loaf

Packed with protein and rich in omega-3 oils, we absolutely love this alternative to our regular loaf! The recipe was a ‘eureka’ moment in the early hours of the morning, when I’d been up developing and testing recipes for our new book ‘Superfood Breakfasts‘. It’s full of seeds for depth of flavour and lots of crunch, as well as being gluten free, dairy free, refined sugar free & yeast free AND it’s a doddle to make (no kneading or rising required!) Perfect…

Delicious just as it is with squished avocado & tomatoes or toasted and spread with homemade brazil nut butter & chia jam. We’ve been munching on it for breakfast, lunch and dinner. Hope you enjoy it too!

Apple & Beetroot Porridge

I love beetroots! They’re so easy to grow and are a totally gorgeous colour. We’ve been experimenting with beetroot in our breakfast porridge and this is the result. ‘Ta da’… delicious pink porridge!

I used organic beetroot powder for this one, but have also made it with fresh beetroot juice and both work really well. We all skipped out the door this morning. Yum…

A little bowl of creamy yumminess with a big nutrient boost – oats will keep you feeling fuller for longer, blueberries are packed with antioxidants, banana has loads of potassium, cashews and nut milk for protein and cacao nibs for extra crunch and ‘zing’! Super-charged protein pancakes

I’ve been meaning to post this recipe for ages, as it’s one of our favourite family breakfasts and such a brilliant way to start the day. They’re our ‘secret weapon’ protein-packed pancakes – perfect for that extra boost when there’s digging to be done on the allotment or before we head out orienteering(!) In fact we don’t need an excuse – they’re awesome any time.

Deliciously thick and super tasty, these pancakes have some pretty unusual ingredients and they’re gluten free, with no added refined sugar to boot! Breakfast will never be the same again….

Rye Sourdough Bread

A few weeks ago I posted the recipe for our rye sourdough ‘starter’ and thought it was high time I followed it up with the recipe for our amazing rye sourdough bread! We experimented for months to get the best balance of ‘crust and crumb’ and I think we’ve pretty much cracked it!

Sourdough bread is the oldest and most original form of leavened bread – made with  wild yeast, packed full of tangy taste and much easier on your digestion than a regular loaf of bread. It contains loads of naturally occurring vitamins and minerals, plus uniquely balanced proteins and fatty acids and is massively more nutrient dense than commercially produced, highly processed breads.

We make two rye loaves a week and haven’t bought a loaf of bread in ages. It’s delicious fresh out of the oven or toasted with anything and everything on it! I really can’t imagine life without it…

Chocolate ‘Cacao’ Porridge

We needed a good breakfast this morning, one that would give us loads of energy for working on the allotment and in our garden at home. This chocolate cacao porridge really hit the spot – it tastes deliciously decadent, but is amazingly good for you! Free from refined sugars, wheat and dairy, but packed full of yum! Hooray….

Raw cacao is very different to processed cocoa powder and one of the most nutrient-rich foods on the planet! It’s a natural source of energy and is said to enhance motivation and feelings of pleasure and bliss – yes please! The oats are incredibly sustaining whilst the nuts, fruit and honey make this an all-round breakfast winner in our house!

Rye Sourdough ‘Starter’

I’m a big fan of homemade bread. There’s something really magical about the process of rising, bashing and baking and nothing beats the smell of a freshly baked loaf wafting around the house! Smells great and tastes even better….

We started making our own rye sourdough a couple of years ago, when we chose to cut back on the amount of wheat in our diets. We felt so good for it and it tasted amazing…there really was no turning back! We now make two loaves every week using the same ‘starter’ that we created all those years ago.

Walnut and Goji Granola

This is such a great way to start the day and will give you loads of energy for hours. Packed full of nuts and seeds, with the natural sweetness of dates and the massive nutritional benefits of goji berries. We have it with homemade almond milk for breakfast, sprinkled on yoghurt for dessert or a sneaky handful grabbed as a snack! I guess you could have it for lunch too if you wanted, so it pretty much covers all bases…..a brilliantly versatile recipe.
